First blush...

I know we normally use this term for tomatoes....but don't my pumpkins look pretty?

What do you do with your pumpkins? I am making plans for mine.

Oh my goodness. What don't I do with my pumpkins? We love them around here. My favorite is to bake up a bunch of pumpkins to putting in bread. We also love it in pancakes, waffles, cookies, smoothies, ice cream. Our pumpkin season is September - November here. My November 1 I have around 400pounds if pumpkin in storage. 8 different types. It stores well and keeps forever. We love using fresh pumpkin is all sorts of things. Also, i cook it then dehydrate it, grind it and store it for when the fresh is gone. Then all I need to do is rehydrate what I need and we are set. Enjoy your garden my dear. It is a joy to watch grow from a distance.

Pumpkin gnocchi! Roasted pumpkin - so sweet! Roasted pumpkin cubes, with whole cooked green beans, marinated feta...pour the marinate over the lot...eat it cold as a salad...nice.
Mashed pumpkin...boil/steam and add butter and mash. Comfort food.
Pumpkin scones! And on and on and on... pumpkins are such a versatile veggie...and as Melissa said they store so well.

There is no better use for pumpkin that pumpkin pie!! People who have not tried this delectable dessert tend to be sceptical, but, once tasted, seconds will definitely be an option! I have three pumpkins waiting to be made into pies at the moment, and the great thing is that you can make them and freeze them, popping them into the oven ready to bake for guests.
